No Bake Lemon and Lime Cheesecake

I baked this lovely cheesecake for my very pregnant friend Tracey. She was craving a no bake cheesecake which I had never made. Luckily it was quite easy, I combined a few recipes and came up with the one below.

Cheesecake Recipe

Base

250gms of dry biscuits (I used Anzac biscuits)

100gm melted or soften butter

Topping

750gm of cream cheese

½ cup of lemon and ½ cup of lime

Rind of lemon

2 teaspoons of vanilla essence

1 tin of 400gm of condensed milk

Method

Blitz the biscuits in the food processer until fine, add the butter and mix.

Press the biscuits firmly and evenly into the base of the cake tin using a spoon or cup, then place in the fridge to set for 15mins.

Beat the cream cheese with the condensed milk until creamy.

Add vanilla essence, rind, juice and mix well.

Pour the mix into the prepared tin and let it set for at least 8 hours in the fridge.

Candied Lemon Recipe

1 lemon thinly sliced

3 cups of water

½ cup of sugar

Method

Simmer the slices of lemon in 2 cups of water for about 30mins then drain the water.

Add the sugar and a cup of water and cook for another 20mins until translucent.

Remove and place them on wax or baking paper, once they have cooled you can decorate your cheesecake.
